Only one more day until it’s perfectly acceptable to consume ginormous amounts of food/calories:) I have already started my part of the cooking by making Angela’s pumpkin pie. It is baking as we speak I type:) I cannot wait to try it!
Since I’ve been home I haven’t been the most productive person. Several pairs of sweatpants/pajama pants/yoga pants have been worn, no make-up has been used, and my hair has remained untamed. I’m not complaining though because it’s been nice just doing nothing;) Since I don’t have to eat dorm food I had many more options for my meals today. I hope you find them a little more exciting/appealing than school food;)
gingerbread chocolate chip pancakes with coffee on the side
looks like a lot, but it’s one serving!
1/2 cup whole wheat flour
1/2 cup almond milk
1 egg white
1 tsp baking powder
1 tsp molasses
1 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp nutmeg
1 tbsp semi-sweet chocolate chips
1. Mix dry in a small bowl. Mix wet in a separate bowl. Combine, stir in chocolate chips, and mix. Cook on a skillet on medium heat. Top with maple syrup and enjoy:)
CEC stuffed acorn squash and a Hawaiian roll with melted white american cheese and dijon mustard
I made this yesterday for lunch and was excited to have the other half to eat today. The filling is soo good.
Snack-5:00pm
ginger root beer Zevia
My stomach hasn’t been feeling too well today so I thought some ginger would help:) I really hope it feels better for tomorrow!
Mama Pea’s thai veggie burger and Angela’s Holiday Salad with Cranberry Apple Orange Vinaigrette
Both were really good and the carnivores in my family even approved!
So I ended my No Dessert November this past weekend. I just couldn’t take it anymore;) I am more then ready for some pumpkin pie tomorrow though;)
I am off to get things ready for the Drumstick Dash tomorrow!
Peace and Love,
Molly
