…insert awkward introduction to starting this post… I never know how to begin these things. So I guess I’ll just say Happy Wednesday! We’ve officially made it half way through the week. There’s no “celebration” quite like WIAW

banana bread breakfast bake
Unlike normal Tuesdays, I didn’t have my yoga class yesterday morning so that meant I got to sleep in. It.was.gloooorious. Since I had more time in the morning, I took advantage of it and switched up my normal breakfast. I made Caitlin’s banana bread bake, and it seriously reminded me just like regular banana bread. Next time I think I’ll top it with a little peanut butter. I may need to make that happen sooner rather than later
veggie omelet and roasted potatoes with lots of ketchup
After my one and only class at school, I headed to the gym for my run. I was hoping I’d be able to run outside this week, but the weather isn’t looking too promising. Monday was 50* and sunny (cross-training day) and yesterday was 28* and snowy. That’s Indiana for ya. To the treadmill I went! After the gym I made the above lunch, and it was so good. That picture is actually from Monday night, but I promise I had the exact same thing. I got the idea from Janae to add pancake mix to the egg mixture, and it makes so much of a difference! Light and fluffy and delicious indeed.
After lunch I headed into work for a bit to do some freight. Since I could not get warmed up, and had a few minutes to spare, I stopped at Starbucks and grabbed a tall coffee with soy milk. Definitely hit the spot.

After work I came home and knocked out an assignment for one of my classes, then it was dinner time! I was craving fruit and yogurt (I promise it’s under there somewhere), but wanted some veggies too, so I made a simple salad to go with it. I used TJs spicy peanut vinaigrette for the dressing and I forgot how good that stuff is.

Since I gave up chocolate and dessert for Lent, I’ve been ending my days with a little cereal to satisfy my sweet tooth. While it’s no ice cream, it still tastes great

Yummm cereal for dessert! So good. I’m not gonna lie, when I saw your lunch I was like damnnnnnnn girl I can’t cook like that for my midday meals! If it was leftovers, that makes much more sense
Except I’m not even that fancy at night so never mind lol
Haha they actually weren’t leftovers! I just threw the vegetables in the oven while I took a shower so when I was dressed and ready, all I had to do was make the eggs!

I snack on cereal *all* the tie, although I tend to have shredded wheat with almond milk and sprinkle of coconut sugar. To die for. That breakfast bake looks delicious!

Hehe intros are the worst part of my post-writing process as well – it’s always hardest to get the ball rolling. And I couldn’t help but laugh at your dinner because I do the exact same thing sometimes. I love a good breakfast for dinner, but if I feel like I haven’t gotten enough veggies in, then I toss a salad in alongside my cereal. Strange, but it works
Intros are always awkward! And I feel the same way. Some nights a bowl of cereal sounds good for dinner, but I like knowing I got some vegetables in there too

I’ve tried Caitlin’s banana bread bake before – I really like it! And I never would have thought to add pancake mix to an omelette…I may have to give it a shot if it leads to fluffier omelettes.
