Happy Wednesday! It’s time to talk about food. Today I actually have a recipe to share. I guess it’s not even a recipe, more like a “how-to”, but I love it so much, I had to share it with all of you
On to yesterday’s eats…

I had an early wake up time since I had yoga, so I made something quick and easy. I’m already craving that meal again (as I’m typing this Tuesday night), so that may just be my breakfast tomorrow

After yoga I had a break between classes, and I also happened to have a free drink from Starbucks, so I cashed that in (soy cappuccino) while studying for an exam.
After another class, plus my exam (I passed! woohoo) I headed to the gym for a run. I was a little hungry so I ate an PB&J amazeball on the way.
Mexican-style salad
I was craving Chipotle, but since the closest one is 20-minutes away (and I didn’t want to spend $7), I made a Mexican-style salad for lunch. I roasted up a bunch of veggies and topped them on a bed of lettuce with guacamole, cottage cheese, and salsa verde. While it was no Chipotle, it definitely hit the spot.
After lunch I headed to work for a bit and when I came home (around 6:30pm), I was starving so I ate another amazeball while prepping dinner.

Now it’s time for the “recipe”! I showed you all last week the omelet I made for lunch, and I’ve been eating that same meal quite a bit the past week. I’m sure you all know how to make an omelet, but this recipe has a little extra ingredient to make it taste even better!
The pancake mix takes the eggs to a whole other level and makes the omelet super filling! Feel free to top it off with lots of ketchup, salsa, or taco sauce
cereal, almond milk, and a peanut butter spoon
Cereal has been my go-to snack at night, and last night it was panda puffs and a few of TJs maple brown sugar shredded wheat (I promise they’re under there somewhere). Then I proceeded to sit in shock as I watched the newest episode of Pretty Little Liars. It’s gettin’ good.

I NEVER would have thought to add pancake mix to an omelette!! I bet if you added some chickpea flour it would be like a cross between socca and an omelette, and packed with protein too!

I just bought panda puffs after going without them for a seriously long time and fell back in love with them. You can’t go wrong when peanut butter and cereal are involved!
