What I Ate “Weduesday”

I decided to take kickboxing with my sister yesterday morning, so beforehand I had a Quest bar “cereal style” plus some coffee. It’s been month’s since I last took kickboxing, and I basically immediately felt sore after class. So many punches. So many kicks. I’m a little scared how I’m going to feel tomorrow.

After coming home and getting ready for school, I had the second half of my breakfast which was some yogurt with pb2 and strawberries. A little while later I headed off to school for my only class of the day.

After school I came home ready for lunch. This picture is actually from my dinner last night since I had the same thing, but it’s Angela’s “Big Vegan Bowl“. It had spinach, carrots, avocado, cabbage, quinoa, roasted chickpeas, sweet potatoes, hemp seeds, and lots of hummus. Seriously, so so good. I don’t think I’ve tried a recipe of hers that I haven’t enjoyed. I still need to get her cookbook!

After work in the afternoon I came home and had some slices of banana bread topped with organic butter and nut butter. I had that pic X2 because I was hungry ;) I also had a small glass of almond milk on the side. In Sedona on our last night we ate at a cafe where everything was vegan, organic, and gluten-free and it was my favorite meal of the entire trip. I would go back to Sedona for that alone. After having their banana bread, I was determined to find a recipe similar to theirs. I searched for a vegan, gluten-free, refined sugar-free recipe and found *this one*. While it didn’t taste exactly like the bread we had in Arizona, it was still really good! We ate the whole loaf in three days if that says anything… ;)

I didn’t end up eating dinner until almost 8pm. I still wasn’t even that hungry then, but felt like I needed to eat something. I decided on a rice cake with 1/2 a mashed avocado topped with turkey, carrots + ranch, and an apple + sunflower seed butter. I’m all for “snacky” kind of plates for meals ;)

I always need to end my day with something sweet, so I tried a new salted caramel  frozen yogurt bar I found at Target. I love basically anything salted caramel flavor and this definitely didn’t disappoint.

  1. Ah kickboxing…my arms get soooo sore the day of class, let alone the day after! Haha.

    I love Yasso bars! Haven’t tried that flavor yet but I’m sure it is as delicious as it sounds :)
    And you can’t go wrong with starting off your day with a Quest bar ;)

    And my dad was just telling me about those greek yogurt bars! He’s addicted. I’ll have to give them a try. (:
